Weekly Meal Planning for March 27 - April 2

Happy Easter! I hope you all enjoy a renewed, relaxing day with family.

The hectic on-the-go craziness that is March for us is coming to an end with a weeklong spring break in the beginning of April. So I just need to survive this next week, then we will all be revitalized and ready to finish out the remainder of spring, right? Hopefully. I am trying a new recipe this week but it's nothing too fancy. 

Sunday: Easter dinner at my father-in-laws' house, we will bring this salad, this dessert, and deviled eggs
Monday: leftovers from Easter dinner 
Tuesday: beef burrito bowls a la chipotle
Wednesday: out to Maddio's with friends from out of town
Thursday: chicken bruschetta zoodles
Friday: out to eat to celebrate beginning of spring break!
Saturday: burgers, grapefruit/avocado salad, grilled veggies

Easter Menu

Whether you're hosting an Easter meal, making something to take to the host(ess), or just like browsing for menus, I have some mouth-watering recipes for you! We are not hosting but will be making something to take to my father-in-law's house as a side for the roast he is cooking.

I'm not a big ham lover so I rarely suggest that as a main, although I know it's a popular one, especially in the south. I prefer some sort of roast. I got into making roasts regularly one season and this recipe was one of my favorites. It would be great as the star of an Easter lunch or dinner. Weekly Meal Planning for March 21 - March 26

This week will be relatively easy as we only have one (!!!) after school activity and that night will be a leftover night. We have a fifth birthday dinner celebration in our house this week too. And I've had a request for chicken pot pie from my oldest daughter, which I may make and freeze for a night next week. 

Sunday: dinner at my mom's
Monday: leftovers from my mom's house 
Tuesday: crockpot whole chicken, green beans, sweet potatoes
Wednesday: beef fajitas
Thursday: birthday girl's choice - vegetarian chili 
Friday: spinach and tomato frittata
Saturday: cheeseburgers, green salad, asparagus, mac n cheese

Weekly Meal Planning for March 13 - March 19

Spring weather continues here, and our meals reflect that! It IS supposed to storm tomorrow, so the cooking method may change for dinner. Oh and don't forget it's time to "Spring Forward" so change your clocks tonight!  

Sunday: grilled sausages, onions, and peppers
Tuesday: spinach quiche, green salad
Wednesday: fish tacos with cabbage slaw
Thursday: green Mac n cheese for St Patrick's Day
Friday: cheese and cucumber sandwiches 
Saturday: slow cooker pulled chicken with cabbage slaw

Weekly Meal Planning for March 6 - March 12

Happy Monday! We have a week of mild temperatures in the forecast (albeit some rain coming in next weekend), so we are looking forward to some grilled food and easy dinners this week. 

Sunday: green salad, tortellini with spinach 
Monday: cucumber and cheese sandwiches, watermelon (quick and easy before a softball game)
Tuesday: grilled chicken taco salad 
Wednesday: burgers, grilled asparagus, tomato mozzarella salad, oven fries
Thursday: leftovers
Friday: fish fry at church 
Saturday: St. Paddy's inspired 40th birthday party
