Weekly Meal Planning for May 29 - June 4

Whew! What a weekend. Summer has officially kicked off here in our household. The last day of school was Friday, followed by a pool party until the wee hours of the evening (read: 8pm)! We logged a lot of pool hours and enjoyed hanging out with "summer" friends again!

This week brings the first of the weekly evening swim meets and more packed dinners. And snacks. And my kids asking for junk from the consession stand. Yay! 🙄

Sunday: grilled lemon herb chicken drumsticks, Mediterranean pasta salad
Monday: leftovers from Saturday's dinner at a Cuban restaurant 
Tuesday: leftover Mediterranean pasta salad, pesto zoodles, watermelon 
Wednesday: leftover pesto zoodles, leftover Mediterranean pasta salad
Thursday: turkey spinach burgers with sweet potato wedges
Friday: pizza from Antico 
Saturday: not sure yet

Memorial Day Cookout Sides

Happy Memorial Day! Take a moment today and be thankful for those who lost their lives for our freedom.

If you're like me, you love the sides at cookouts. So I thought I would put together a quick little post of a few options in case you are scrambling to think of something for later today! If we host a cookout (which we are not today), I usually incorporate grilled sides like corn on the cob, okra, potato packets, or veggie salad. Otherwise, my go-to is some sort of salad.  Here are some great options no matter what your main entree is:

Panzanella

Tomato, Corn, Avocado, Black Bean Salad

Watermelon Caprese Salad

Mediterranean Pasta Salad

Thai Quinoa Salad

Weekly Meal Planning for May 22-28

Whew! Whirlwind of a weekend done! We had a fun weekend with dinners out/cookouts and some beautiful weather! The upcoming week's weather forecasts some of that same beautiful weather so hopefully it will stay that way. And the countdown is on for the last day of school. Five days left! This menu will reflect the need for easy meals this week. 

Sunday: end of soccer season cookout at school
Monday: chicken pappardelle with mushrooms, kale and asparagus  
Tuesday: white bean and zucchini enchilada casserole 
Wednesday: leftover casserole
Thursday: steak and arugula salad 
Friday: dinner at a friend's pool 
Saturday: birthday dinner for May family birthdays

Weekly Meal Planning for May 15-21

Happy Weekend! We are on a serious countdown to the end of school (3 more days for my prek daughter, 10 more for my first grader)! I can't wait for summer days. Our neighborhood pool opened this weekend but we did not take  advantage. It is chilly plus we had a few things planned already. Anyway, I see some rainy days ahead on forecast so I may toss in some heartier meals. I feel like we have already been sticking to lighter, summer like meals. 

Sunday: cookout at my brother-in-law's for my nephew's birthday
Monday: out for dinner after softball game to celebrate hubby's birthday
Wednesday: broiled salmon, asparagus, caprese salad
Thursday: creamy chicken pappardelle with mushrooms, kale and asparagus 
Friday: out to dinner
Saturday: cookout at school

Weekly Meal Planning for May 8-14

To avoid sounding like a broken record, I will just say that we have a few days this week that a fast, "prepare ahead" meal will be necessary! The fridge is empty and we are expecting a farm box of goodies today. So I will supplement at the farmers market and get a lot of prep work done! 

Sunday: out for Mother's Day 
Monday: mac n cheese and peas
Tuesday: fish tacos with mango guacamole and kale slaw
Wednesday: at a Girl Scout function
Thursday: sausage sandwiches, veggies/ cucumber, fruit 
Friday: out for sushi 
Saturday: at a friend's house for a cookout

Weekly Meal Planning for May 1-7

This week is the start of our May(hem) craziness. The countdown is on for the end of the school year! Volunteer projects are wrapping up, end-of-year performances, recitals, and parties are being planned, and last minute coffee get togethers with fellow moms are on the calendar before summer vacation begins! I am looking forward to having less structure and some downtime with my kiddos this summer, especially evenings at the pool. What is your May like?

Sunday: cheeseburgers, sweet potato fries, kale and strawberry salad 
Monday: rosemary-rubbed pork chops, green beans, roasted beets
Tuesday: chicken fajita salad
Wednesday: leftovers
Thursday: "super" eggs (scrambled eggs with kale)
Friday: swim team cookout
Saturday: at a Kentucky Derby party
